M&M stands for Malabar & Monsooned. This bean comes from the coastal region of Malabar in India and has undergone the so-called 'Monsooning' process. The Monsooning process was developed after the first time coffee beans were shipped from India to Europe. On the ships, the coffee beans were exposed to severe weather conditions and had developed a strong characteristic taste on arrival. To recreate this taste, the beans are now exposed to the elements in highly ventilated department stores on the coast of the Indian region of Malabar. After two to three months of this so-called 'Monsooning' process, the bean has developed its characteristic taste.
